When George first came to see me, just retired from IT work at the age of fifty-four, he had been gaining weight steadily over the previous eight years. He had tried running and other forms of exercise to thwart the expansion of his girth and attempted to diet periodically using the old standard low-cal approach, to no avail. His less-than-flattering nickname was the “Bottomless Pit.” At dinner, he would scan the table to see who might not finish their food and monitor the serving dishes to make sure he could get seconds of meat along with pasta, rice, potatoes, or bread. Nothing went in the fridge for later; he ate it all. He used to joke that he had a “broken full switch” and he knew that he was full only when it hurt—though the joke was definitely on him, and under the smiles, he knew it. He was considerably overweight, and his blood pressure had reached a borderline hypertensive state. He was tired a lot of the time, had trouble getting a good night’s sleep, and often felt anxious or foggy, struggling to think clearly at work—a classic carbovore symptom. His complexion was bad, and he had digestive problems.

The nutritional approach I proposed was completely opposite his habits, but George was keen to put an end to the relentless battle with diets and find a better path forward. He agreed to stock his kitchen with pastured meats and eggs, bone-broth-based soups, and wild-caught fish. He cut out all grains, legumes, and starchy vegetables and made large salads full of dark green vegetables, with frequent additions of avocado, coconut, and extra-virgin olive oil. He cut out all fruit, save for a few tart berries, since weight loss was a goal. George even got into making his own homemade sauerkraut and kefir.

After about a week of this, he called me to recount “an incredible experience.” One night, after eating a moderate-sized dinner, he noted a very new and foreign sensation: he felt comfortably full. He laughed out loud, surprised and awed. It had been a long time since he’d heard that message from within. As the days passed, that sensation continued: he’d note that he was satisfied after completing his meal, and he had no desire to overeat.

He also began to see improvements to his health. After five months, he had shed around forty pounds, reaching an optimal and stable weight. His blood pressure normalized, he slept better at night, and he felt calmer and steadier by day. His complexion cleared up and his brain fog lifted. He was thrilled. He reported another important shift: his perception of what constituted “food” had changed completely. He had been a self-proclaimed indiscriminate omnivore with a rather addictive personality—“if I see it, I eat it” had been his mantra. Now he was attracted only to the foods that worked for his body. The old foods simply lost their power over him.
